Frittata

Saturday nights for many people are "date night" or a night to go out on the town. I enjoy that occasionally but when doing so I quickly remember why I don't- due to the wait and uneven service or food.  Mostly I like to use Saturday to shop for fresh ingredients and come up with a healthful repast for George and I or if we are lucky for one of the children or guests. Since my son was home I had the added pleasure of having him along for the shopping experience.  I am a "foodie" -love everything about food-the history, the sights, sounds, and aroma of it. This is probably because I grew up around people who revered cooking and the tasting experience. Because of that both my kids really enjoy cooking and trying new recipes. Lucky me. So when my son decided to look up a recipe for our new potatoes and found Frittata I agreed that would be a perfect companion to our stuffed turkey breast and spinach pear salad. This is also a recipe I make with my Gourmet Foods classes and it usually comes out great. He diligently prepared the potatoes by slicing them thin and pan fried them just lightly brown, added the onions (we used yellow, red and scallion as a little of each was found in the refrigerator) while I began to beat the eggs, milk and cheese.  to be more healthful we decided to reduce the amount of eggs which was our first mistake. He followed the recipe when it said stir in the eggs and like many of my students in the past began to really stir up the eggs forming scrambled eggs and potatoes. He quickly drew my attention to it and I realized that the recipe should say stir the ingredients but pour over your vegetables and let set up. We quickly beat another egg and again to be healthful added 1 small container of "egg beaters" this would add the liquid we needed to pull the recipe together. He poured it over, we covered the pan, and let the heat set it all up. After it was set we sprinkled basil and grated parmesan and set it under the broiler to brown up-I reminded him to cover the handle with foil so it would not melt. Minutes later a perfectly browned frittata emerged-the 3 of us enjoyed the fruits of our labor!

Las Vegas


While I was in Las Vegas I thought I would start a blog of my musings and interests that I come across. This is a shop at the Bellagio and I thought a chocolate fountain was a way to start! This shop actually has great yummy treats for breakfast, snacks or gifts-the fun coffees are good too-an alternative to Starbucks.
